Story of the Wine:
Torre a Destra , literally 'tower to the right', is now the name of Castello della Paneretta's Riserva wine. This estate has a high % of old sangiovese vines, which give the wines an excellent structure. The 22ha. of vineyards are on the western edge of the Chianti Classico district and part of a larger estate of about 309ha, most of which is woodland. This wine is developing the growing trend in the region for optimising the local grapes, rather than using French imports, and then using modern vinification and ageing methods to produce the best wine possible.

Area: From the Castello della Paneretta vineyards between the villages of Barberino and Castellina.
Vine density: Nearly ¾ of the Paneretta vineyards are at a density of 5,000 vines per ha.
Training System: Cordone Speronato
Harvest: September, mid or late depending on the vintage
Vinification: Fermented in both stainless steel and wood at a maximum temperature of 33 ºC. The fermentation and maceration took a total of 35 days. Then there is the malolactic fermentation.
Ageing: The wine is aged for 12-15 months. Half of the wine is put into barriques (half new and half 1 year old) and the other half is put into larger Slavonian casks - 30 and 50hl. After bottling it is then aged a further 12 months before release.
